In harmony with the atmosphere, the table is really there at Lou Castel. Woman of character and concern who has invested here sensibility into the furnishing of the rooms, Lili does not hesitate to express her respect for the memoirs of the anciently : "They left us their know-how and the knowledge we can be proud of"
On top of all, Lili has done a tasteful job. With the heritage of the past as guiding-line, she composed the menus dissolved in the atmosphere where Lou Castel is bathing in.
"Pleasure, comfort, a wink to the ancestors, the tasteof quality of work in olden times, know-how, memoirs... All these words resound in me and guide me to set up menus, to compose dishes. And further on, let us not forget, the local products are abundant here. I always cook with fresh and fine originals".

for Grandmother's recipes
Lili at the cooker, it's the guarantee for an elaborated cuisine on a base of grandmothers'recipes. They give a delicious smell of the country. Some specialities : cheese soup (even when asked during the summer !), gratin with cep, roasted veal with cep, ragout of free-range rabbit, pancake with black pudding and apples,

Lou Castel carries well is nam. Dialectician, as the saying is and, refined the sonorities of the lan-
guage, it rays his warmth.
It was entirely this what Lili wanted to translate
when she installed her restaurant between the solid
walls of the castel of Nages to open up for enter-
tainment, the atmosphere and, well understood, the
generosity of a fine and excellent cuisine. "The fact of an existence at an historical environment is a carrier of atmosphere. This is what I really desired. Here, every-
one has to feel himself at home, says Lili with a big smile,
to harmonize the table and the generosity, it's to look for
and to give as much pleasure as possible, taking care
of a moment at the table that transforms itself into a sou-
venir of serenity and rejoice. For all of this, Jacques, my husband, supports me very efficient". Nothing, at Lou
Castel, contradicts Lili. The fire in the chimney sings a
song of happiness. The solid rusticity of the beams and
walls add gaiety to this warmth. And then, on top of it, a
gratin with cep of the region arrives...
